List the organization's catalog items
GET /api/v1/products
Requires authentication (Bearer token) and the X-Organization-Id header.
Picker source for invoice/quote line items (#842). Active items by default (is_active=0 lists retired ones); filters: search (name/SKU/description, case-insensitive), type (product|service), category_id; per_page up to 100. unit_price is a decimal string derived from the stored cents; tax_rates is the item's default tax in the canonical per-line shape (see GET /api/v1/tax-rates).
